Our Review

Winemakers Tim Byrne (ex-Terindah Estate) and Niki Nikolovski established their Timboon-based label, Babche, in ’19. Drawing on their combined winemaking experience both here and abroad, and inspired by the summers Niki spent visiting her grandparents in Macedonia (babche is a Slavic term of endearment for ‘grandmother’), the duo craft expressive wines using traditional (but not conventional) methods, meaning as much as possible is done by hand, with zero adds. In ’21, Tim and Niki began planting a 2ha high-density vineyard to chardonnay, pinot noir and cabernet franc; the site is certified organic and farmed with both biodynamic and permaculture principles. In ’24, Niki and Tim opened a small cellar door in the Timboon township, offering tastings by the glass and a simple, seasonal menu. -ANNA WEBSTER
